So let’s be real, eating healthy seems daunting but in reality it is one of the easiest things you can do, so long as you can tweak your tastes. I find cooking with lots of fresh herbs and spices adds more depth and makes it seem that you are eating a more satiable meal. I’m still on the no carb kick, because I’ve realized my body HATES carbs. No more bloat, gas, feeling sh*tty and all the other stuff that goes with it, whereas hubby on the other hand can eat it and for him eating it in moderation is better. Which makes me hate him a little bit because damn it, even complex carbs are no good for moi! :(

But I have been loving cooking lighter meals and really playing with flavours. I’ve been on a slight sugar crave so dinner tonight was fabulous. Unfortunately I won’t be having the sweet potatoes anymore, boo, but this meal was SO filling and SO SO YUM!


Pork Chop Recipe

Delicious Pork Chops

Easy baked pork chops with cherry butter sauce

Makes: 2 servings

Ingredients:
  • 2 bone in pork chops, about 1 1/2-2 inch thick
  • 4 tbsp salt
  • 3 tbsp pepper
  • 2 tbsp paprika
  • 1/2 cup organic butter
  • 1/3 cup organic cherry preserve
  • Instructions:
    1. Preheat oven to 400 F, while oven is heating prep the pork by drizzling with olive oil and generously seasoning with salt, pepper, and paprika. Place pork in pre-heated oven and set timer for 20 mins, based on size of pork chop start checking the meat at around 15 mins, we don't want it drying out.
    2. While the pork is in the oven get the sauce ready... place the preserve in microwave for 15 seconds, stir in butter and salt to taste. Mix it all together and pour it over top the pork chops in the last minute of baking.
    3. Serve with sweet potato and a delciious summer berry salad with a light oil vinagrette.

    This recipe is super easy and super healthy. Perfect for a busy weeknight dinner and makes for delicious leftovers! See this whole healthy thing isn’t so bad ;)
